12 months have past since we wrote our last post “A Leap of Faith.” This highlighted our journey of diversifying from an event catering company into the realm of owning our own coffee shop on Princes Street, Edinburgh https://www.lintonandco.com/cafe/
The journey to where we are now has been an uncertain and rocky road. This has only been intensified by the global pandemic. Looking back to May 2021 we emerged out of Scotland’s second lockdown into an upturned hospitality industry. As a result there were many additional challenges. These included extra cleanliness procedures, staff shortages and hesitant Edinburgh locals. With a Princes Street not quite as bustling as pre-COVID-19, we never knew what footfall was going to be. However, we’ve really enjoyed bringing Specialty Coffee to the heart of Edinburgh. We offer a much higher quality, traceable and carefully prepared coffee than our corporate giant, coffee neighbours. This has won over commuters, tourists, shoppers and city workers.
We followed the opening of our coffee shop on Princes Street with a return to The Hub on the Royal Mile. This location is a stone’s throw from Edinburgh Castle. Our Van is on the terrace serving up Specialty coffee and cocktails to tourists soaking up the historic setting.
What’s next?
Now in May 2022, we look back at last year’s events. It is quite unbelievable that we’ve come out stronger and better than ever. We have 2 popular locations in the heart of Edinburgh. A coffee shop on Princes Street and our Van on the Royal Mile. With Covid-19 restrictions having finally eased up, we are eagerly anticipating a busy summer with the return of events. These include the Edinburgh Fringe Festival https://www.edfringe.com, Royal Military Tattoo and Concerts at the Castle plus some very exciting projects in the mix for ourselves!
